Ingredients
- Cupcakes: 1 1/2 cups (190 g) all-purpose flour, 1 cup (200 g) granulated sugar, 1/2 cup (115 g) unsalted butter, softened, 2 large eggs, 1/2 cup (120 ml) whole milk, 1 1/2 tsp baking powder, 1 tsp vanilla extract, 1/4 tsp salt
- Chocolate Buttercream: 1/2 cup (115 g) unsalted butter, softened, 2 cups (240 g) powdered sugar, 1/3 cup (30 g) unsweetened cocoa powder, 2 tbsp (30 ml) milk, 1 tsp vanilla extract, pinch of salt
- Decoration: 12 large marshmallows (for bunny bottoms), 24 mini marshmallows (for bunny feet), Pink decorating gel or pink edible marker, 1/2 cup (60 g) chocolate cookie crumbs (for dirt), 2 tbsp (20 g) white chocolate chips (for bunny tails)
Instructions
- Preheat oven:
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- Cream butter and sugar:
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
- Combine dry ingredients:
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet, alternating with milk. Mix until just combined.
- Bake cupcakes:
- Divide batter evenly among cupcake liners. Bake 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- Prepare buttercream:
- Beat butter until creamy. Add powdered sugar, cocoa, salt, vanilla, and milk. Beat until smooth and fluffy.
- Frost cupcakes:
- Frost cooled cupcakes with chocolate buttercream. Sprinkle with chocolate cookie crumbs to resemble soil.
- Assemble bunnies:
- Place a large marshmallow on the cupcake as the bunny bottom. Attach a white chocolate chip as a tail using a dab of frosting.
- Create feet:
- Slice mini marshmallows diagonally to create feet. Use pink decorating gel to add paw details, then attach two feet to each bunny bottom.
- Arrange cupcakes:
- Arrange all decorated cupcakes on a tray to resemble bunnies burrowing.
